'Refried' Black Beans with Cilantro, Garlic and Chili Pepper
'Refried' Black Beans with Cilantro, Garlic and Chili Pepper

Ingredients

  • 1 Tbsp Olive Oil
  • 1 medium Onion, small dice
  • 1 small Yellow bell pepper, small dice
  • 2 Tbsp Gourmet Garden Cilantro
  • 1 small Gourmet Garden Garlic
  • 1 Tbsp Gourmet Garden Chili Pepper, optional
  • 1 (15 oz) can Black Beans, rinsed and drained
  • 1/2 cup Low sodium, fat free chicken broth

Step 1

Add olive oil to a medium non-stick sauté pan over medium-high heat. Add onion and bell pepper; cook 7-9 minutes; until softened. Add remaining ingredients.

Step 2

In a blender or food processor, blend black bean mixture until blended but still slightly chunky.

Step 3

Add blended black beans back to the sauté pan over medium heat. Simmer for 5 more minutes. Stirring frequently.
